Marinated Pork Tenderloin with Roasted Pepper Relish

A savory pork tenderloin made more flavorful with a roasted pepper relish.

For the pork tenderloin
1 Large Shallot
1 Bunch Fresh Basil, Chopped
Juice from 1 Lemon
2 teaspoons paprika
1 teaspoon ground cumin
2 teaspoons olive oil
3 cloves of garlic, thinly sliced
1 pound pork tenderloin, trimmed
Salt and Pepper to Taste

For the Relish
½ Red Onion, Thickly Sliced
1 Large Red Pepper
1 Large Yellow Bell Pepper
2 Green Chiles (Hatch or Anaheim)
1 Tablespoon Chopped Basil (I used a frozen cube)
1 teaspoon sugar
2 teaspoons Marsala Wine Vinegar
Salt to Taste
