I was so afraid to cook with Chorizo…because what is Chorizo anyway?! Turns out, it’s a delicious sausage that’s easy to cook and packs a delicious punch to any recipe, including this Mexican Frittata! So strap on your sandals and head south of the border with me for this tasty breakfast frittata.

1 medium white onion, diced
2 medium russet potatoes, peeled and diced
½ lb chorizo (you\'ll usually find this by the sausage in any grocery store)
