This is one of my favorite breakfast for dinner recipes, but it's great just for breakfast too! It's super fast and easy to whip up and tastes amazing with homemade berry sauce and whipped cream.

1 cup milk
1 cup flour
6 eggs
1/4 teaspoon salt
1 1/2 teaspoons Vanilla extract
1/4 cup butter ( (melted) )


Preheat oven to 400 degrees. In a blender, blend together all ingredients except for melted butter. Slowly blend in the melted butter so that it doesn't start to cook the eggs. Grease a muffin tin very well and then pour batter evenly into each cup. Each cup should be almost full. Makes about 12 mini pancakes.

Bake for 15-20 minutes or until lightly golden. The pancakes will pop up and look like they are exploding out of the pan but they will deflate a little once you take them out of the oven and they sit for a few minutes.

Serve with homemade berry sauce and whipped cream.
