Mushroom Alfredo Penne Bake

A yummy, hearty, vegan casserole, loaded with mushrooms and flavor

1 lb. whole wheat penne pasta
1 head cauliflower (about 6-7 cups of florets)
3 cups vegetable broth, divided
3/4 cups regular soy-milk
1/4 cup extra virgin olive oil
1 teaspoon kosher salt
2 cloves garlic
24 ounces fresh, sliced mushrooms
4 tablespoons Earth Balance margarine, divided
1 block seitan, ground (you could also use a vegan ground beef product: Gardein, Beyond Meat, etc.)
1 cup Daiya Swiss, shredded
