Mushrooms and lentils swim in a tasty tomato sauce and topped with tangy mashed potatoes! A delicious and hearty #MeatlessMonday meal!

1 cup lentils, dried
3 cups mushrooms, sliced
1 cup onions, diced
3 cloves garlic, minced
2 cups vegetable broth
12 ounces tomato paste
5 sprigs fresh thyme
3 cups potatoes, peeled and diced
1/3 cup skim milk
2 tablespoons margarine
salt and pepper to taste
14 ounces mixed vegetables, drained
