Frittata, the basis for endless possibilities! This one has hearty mushrooms, sweet onions, and delicious thyme.

4 cups mushrooms, sliced
2 cups onions, thinly sliced
1 tablespoon butter
1 tablespoon extra virgin olive oil
2 cups egg substitute (or 8 large eggs)
1/4 cup Italian cheese blend
2 tablespoons dry bread crumbs
1 teaspoon garlic salt
1/4 teaspoon black pepper
1 tablespoons fresh thyme, chopped
1 cup sharp, reduced-fat, cheddar cheese, grated
1/8 cup Parmesan cheese
