A VERY filling and tasty French style shrimp salad

1 pound shrimp, cooked and cooled
2 cups green beans
2 cups red potatoes, peeled and diced
6 ounces marinated artichoke hearts in water (Rienzi)
2 whole roma tomatoes, cut into wedges
3 whole hard boiled eggs, cut into fourths
16 whole kalamata olives
1 cup red onion, thinly sliced
3 cups Romaine lettuce
1/4 cup tarragon vinegar
2 tablespoons Dijon mustard
1 packet Italian dressing mix (Good Seasonings)
salt and pepper to taste
