Oatmeal Pumpkin Cookies

These pumpkin cookies are one of our favorites! They are chewy and delicious and they also make the house smell wonderful!! We like to mix it up and put chocolate chips in them one time, and then the next time we make them we put raisins in them.

1 cup butter, softened

1 cup brown sugar
1 cup sugar
1 cup pumpkin puree
1 egg
1 tsp. vanilla extract
2 cups flour
1 1/3 cups oatmeal
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
Optional choices: 3/4 cup semi sweet chocolate chips, 3/4 cup raisins, 1/2 cup chopped nuts
