Paleo Turkey, Zucchini and Pepper Casserole

This Paleo casserole is made of layers of fresh veggies, bright herbs and turkey to make it protein packed and healthy! It’s easy to make, and the whole family will love it!

For the casserole: 1 Tbsp + 1 tsp Olive oil, divided
1 Lb 93% Lean Ground turkey
1/2 Cup Onion, diced (about half a small onion)
1/4 Cup + 2 Tbsp Tomato paste
Pepper
1 Large zucchini, sliced 1/4 inch thick
1 tsp Garlic, minced
1/2 tsp Salt
1/4 tsp Cumin powder
1/8 tsp Cardamom powder
1/8 tsp Oregano flakes
1/4 tsp Chili powder
1/2 tsp Fresh Tarragon, minced + additional for garnish
1 Large tomato, thinly sliced
1 Cup Orange bell pepper, diced (about 1 large pepper)
For the sauce:
1 1/2 Tbsp Olive oil
1 Tbsp + 1 tsp Almond meal
1 Tbsp + 1 tsp Coconut flour
1 Cup Unsweetened Almond milk
