Parmesan and Spinach Orzo

A delicious pasta dish with all of the yummy, creamy flavor of alfredo, but a little healthier. Serve it as a side, or throw in some chicken or shrimp for a delicious main dish!

2 1/2 cups uncooked orzo
2 Tbsp olive oil
1/4 of a yellow onion, chopped
2 cloves garlic, minced
2 tsp flour
1 cup milk
1/4 cup heavy cream
Salt and freshly ground black pepper, to taste
1 1/2 cups packed chopped spinach
1 Tbsp chopped fresh parsley
3/4 cup finely shredded fresh Parmesan cheese
