Perfect Funfetti Cupcakes

A soft and sweet yellow cake filled with rainbow sprinkles. Topped with a perfect vanilla buttercream and even more sprinkles!

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 stick unsalted butter, melted
1 1/4 cups sugar
3 large eggs
1 tablespoon vanilla extract
3/4 cup buttermilk (or combine 3/4 cup milk + 1 teaspoon white vinegar and let sit for 5 minutes)
1/2 cup Sprinkles
For the frosting:
2 sticks unsalted butter, softened
1/4 teaspoon salt
5 cups powdered sugar
1 tablespoon vanilla extract
1-2 tablespoons heavy whipping cream
Additional Sprinkles, for decorating
