Potato White Cheddar Sausage Soup

A creamy potato soup with cheese, sausage and some vegetables, that is very filling.

1 tablespoon unsalted butter
3 carrots, peeled and diced
3 stalk celery, diced
1 large sweet onion, diced
1 bay leaf
1 teaspoon dried thyme
3 pounds russet potatoes, peeled and diced
64 ounces low sodium chicken broth
2 cups half and half
3 tablespoons all purpose flour
8 ounces sharp white cheddar cheese
2- 14 ounce packages of smoked sausage, diced
black pepper, to taste

Garnish (optional):
sour cream
