Pumpkin Ale Brioche Cinnamon Rolls

Seasonal pumpkin ale adds flavor and richness to these cinnamon rolls.

For Dough:
2 cups whole wheat flour
5 1/2 cups all-purpose unbleached flour
2 packets instant yeast
1 teaspoon salt
2 1/2 tablespoons vital wheat gluten
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
15 ounces canned pumpkin
1/2 cup egg substitute
2 whole eggs, lightly beaten
1/2 cup molasses
1/2 cup margarine, melted and cooled
1 1/4 cup pumpkin ale (Dogfish Head Ale)

For Filling:
1/4 cup margarine
1 cup brown sugar
3 tablespoons ground cinnamon
1/2 cup chopped walnuts

For Glaze:
2 ounces low fat cream cheese (Neufchatel cheese), softened
1/4 cup margarine, softened
1 cup powdered sugar
1/2 teaspoon vanilla extract
