Pumpkin Ale Pretzel Buns with Black Sea Salt

Seasonal pumpkin ale proofs the yeast for these tasty pretzel buns topped with black sea salt.

1 cup pumpkin ale, warm (105F to 115F)
2 1/4 teaspoons instant, dry yeast
3 1/2 cups unbleached, all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 cup pumpkin puree
6 cups water
2/3 cup baking soda
1 whole egg white
1 tablespoon water
2 tablespoons black sea salt
Combine ale and yeast in the bowl of a stand mixer and stir until combined. Allow to rest about 5 minutes or until frothy. Add flour, sugar, salt, pumpkin and stir until combined with the paddle attachment....
