the perfect fall breakfast| bagels with a hint of pumpkin, cinnamon, and nutmeg

1 envelope of active dry yeast, I use Red Star
1/4 cup of brown sugar
3 1/2 cups King Arthur Bread Flour, you could also use AP flour
1 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1 1/4 cup of very warm water {110 - 120 }
1/2 cup pumpkin puree, not pumpkin pie filling
1/4 cup of brown sugar
3 1/2 cups King Arthur Bread Flour, you could also use AP flour
1 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1 1/4 cup of very warm water {110 - 120 }
1/2 cup pumpkin puree, not pumpkin pie filling
Combine all of the dry ingredients
add the water and pumpkin
stir to combine
knead the dough until you have a soft, smooth ball
cover and let rise until doubled, abut 1 1/2 hours
punch down and divide into...
