Creamy pumpkin cheesecake with a sweetened sour cream topping.

Crust
1-1/2 cups graham cracker crumbs
3 tablespoons sugar
1/2 teaspoon cinnamon
1/3 cup butter, melted
Filling
3 (8 oz.) packages cream cheese, softened
1 cup packed brown sugar
1 teaspoon vanilla
1 (15 oz.) can pumpkin
1 (5 oz.) can evaporated milk
2 tablespoons cornstarch
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
2 eggs, lightly beaten
Sour Cream Topping
2 cups (16 oz.) sour cream
1/3 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
Caramel sauce (optional)

Preheat oven to 350 degrees. In a small bowl, combine graham cracker crumbs, sugar and cinnamon. Stir in melted butter. Press onto the bottom and part-way up the sides of a greased 9-inch springform pan....
