Raspberry White Chocolate Mascarpone Tart

A chocolate cookie crust with a sweet Mascarpone cheese filling, all topped off with fresh strawberries.

20 chocolate sandwich cookies (such as Oreo)
4 tablespoons butter, melted
1 (8 oz.) tub Mascarpone cheese
1 cup whipping cream
3 tablespoons granulated sugar
1 teaspoon vanilla
1/3 cup chopped white chocolate or chips
3 pints fresh raspberries, washed and thoroughly dried
