Really Good Crock Pot Roast Beef

Not only is this roast beef tender and flavorful, it makes its own gravy!

3 pounds beef roast (I like Sirloin tip)
Pepper to taste
1 envelope dry onion soup mix
1 can cream of mushroom soup
1/2 cup water
