Ricotta Carbonara with Seared Scallops

Delicious ricotta cheese enhances the traditional carbonara sauce. Add a touch of cream and some pasta and a delicious sauce is born!

4 ounces pasta
2/3 cup egg substitute
1/2 cup Parmesan cheese
1/8 cup fat free half and half
1/4 cup part-skim ricotta cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/8 teaspoon ground nutmeg
1/2 cup pasta water
1/8 cup fresh parsley, chopped
1 pound sea scallops
1 teaspoon lemon dill sea salt
2 teaspoon extra virgin olive oil
