I've never been a huge fan of vegetables, but carrots of any kind are something that I can actually swallow! These Roasted Balsamic Carrots are probably one of the easiest side dishes I have ever come across, and they taste absolutely amazing! These would be perfect on any Thanksgiving table!

16 ounces baby carrots
1/4 cup extra virgin olive oil
2 tablespoons Vinegar, balsamic
1/2 teaspoon salt
1/2 teaspoon black pepper
