A spin-off of Amy's Samosa Burritos, these wraps are stuffed with spiced potatoes, scrambled tofu and green peas for a protein-powered lunch wrap.

3 cups cubed potatoes
8 oz extra-firm tofu
1 tsp vegetable oil
1 tsp coriander seeds
1 and 1/2 tsp ginger
2 cloves garlic
1 jalapeno
3/4 tsp ground cumin
1/2 tsp garam masala
1/4 tsp ground turmeric
3/4 tsp salt
2 small Roma tomatoes
1/2 cup green peas
1/4 cup chopped fresh cilantro
6 whole wheat tortillas (or use gluten-free if needed)
