Savory Rice Pilaf

This is my grandma’s recipe for Rice Pilaf. I remember how much I loved this when I was a child. She may have made up this recipe herself. It goes really well on the side of some roast chicken or a beef dish, such as London Broil. Ohhh…it is so good!

2 t. butter
1 large onion, chopped
½ green pepper, chopped
1 c. celery, chopped
½ lb. fresh mushrooms, sliced
1 small jar chopped pimentos
¼ t. garlic powder
¼ c. butter
¼ c. soy sauce
2 beef bouillon cubes dissolved in ¼ c. boiling water
1 lb. cooked rice
First, to make 1 lb. of cooked rice, Place 1 1/2 c. rice into 3 cups water (I don’t add salt, because the soy sauce will give it the salty flavor.) Bring to a boil, cover and reduce to a simmer. Simmer 20...
