Shrimp Bisque

1 pound shrimp ( peeled, cleaned and deveined (shells and/or tails reserved) )
4 cups chicken stock
3 tablespoons Olive oil
3/4 cup green onion ( chopped (both green and white parts) )
1 tablespoon garlic ( minced )
pinch cayenne pepper
1/2 cup sherry ( dry )
4 tablespoons unsalted butter
1/4 cup all-purpose flour
2 cups half and half
1/3 cup tomato paste
2 teaspoons kosher salt
1 teaspoon ground black pepper ( fresh )
