Slow Cooker Asian Chicken Burritos

These Slow-Cooker Asian Chicken Burritos are awesome! They are bursting with so much flavor and texture…my husband said that I should sell them in a restaurant! While I guarantee that’s not going to happen, they will certainly save us some money on carry-out!

For the chicken:

Approximately 2-3 lbs. boneless, skinless chicken thighs
Salt and pepper
1 cup honey
½ cup soy sauce
¼ cup ketchup
1 tablespoon sesame oil
1 tablespoon canola oil
2 teaspoons minced garlic
½ cup sliced green onion
1 Tablespoon cornstarch
2 Tablespoons cold water

For the Chinese Coleslaw:

1 (10 oz) package coleslaw mix
2 green onions, sliced
1 package chicken ramen noodles, uncooked, crumbled (set aside seasoning packet for use in the dressing)
2 Tablespoons sugar
1 Tablespoon sesame oil (if you don’t have sesame oil, no problem – just substitute an extra tablespoon of canola oil)
1 Tablespoon canola oil
1 Tablespoon apple cider vinegar
1 packet ramen seasoning
½ cup almond slivers, toasted

Cooked Jasmine or white rice, for serving
Flour tortillas, for serving
