Slow Cooker Beer & Chilli Chicken Enchiladas

The meat mixture for these Beer & Chilli Chicken Enchiladas cooks in a tomato, beer and chilli sauce in the slow cooker all day so all you have to do is roll and bake when you’re ready- so easy for a fiesta after work!

4 medium chicken breasts
¾ cup light beer
1 15 oz. can chopped tomatoes (small can)
2 chillies in adobe + 1 tbsp. of sauce from can
1 small onion, sliced
2 cloves garlic, smashed
½ tsp each salt and pepper
2 tsp. taco seasoning
1 can black beans, drained and rinsed
1 can chopped green chillies
2 cups shredded cheddar cheese
1 package of flour tortillas (10 tortillas)
2 tbsp. chopped cilantro (optional)
