This casserole is perfect as a delicious breakfast or a quick and easy dinner! If you don't want to use ham, you could easily substitute cooked sausage or bacon in it's place!

1 medium onion, diced
1 green bell pepper, diced
1 (16 oz) package frozen hashbrowns
1 cup Colby Jack cheese, shredded
