Before leaving Missouri I had a friend give me all of her family cookbooks. I really think I was in heaven! This was one of easiest crock pot meals I have ever made. It took under 10 minutes to chop everything and throw it in the slow cooker. And believe it or not... the taco seasoning added just the right touch!
Slow Cooker Busy Day Stew

Ingredients2 pounds stew meat
1 baby carrots ( small bag of baby carrots )
1 onion ( chopped )
2 potatoes ( large and chopped )
1 Can (12 oz) tomatoes ( diced )
1 tomato ( large and cut )
2 clove(s) garlic
1/2 taco seasoning mix ( 1/2 of packet )
1 Can (12 oz) beef broth
DirectionsIn your crock pot add your stew meat (mine was still frozen), carrots, onion, potatoes, canned and large tomatoes, and garlic. Sprinkle the taco seasoning on top then add your beef broth. Cook on Low for 6 to 8 hours or until carrots and potatoes are soft.
Serve with a side salad and rolls.
