My Mother-in-Law came to help before I had my baby and she cooked up this meal. Sometimes I feel like a lot of my slow cooker meals taste the same but this was so different! It is so easy to throw together and it is delicious!!!

Slow Cooker Chicken Tortellini

4    chicken breast ( cooked and cubed )
1    tortellini, pasta with cheese filling ( I used 3 cheese )
26    ounces    spaghetti sauce
15    ounces    canned tomatoes ( diced )
15    ounces    low fat ricotta cheese
2    tablespoons    butter
2    cups    spinach ( fresh )
1    cup    white mushrooms ( fresh, sliced )
1/2    onion ( diced )
1/2    Can (6 oz)    olives ( sliced )


Saute the spinach, mushrooms and onion in the butter. Add the cooked cubed chicken until warmed through.

In a separate bowl mix together the spaghetti sauce, the canned tomatoes and ricotta cheese.

In a greased crock pot place your tortellini, veggie and chicken mixture, spaghetti sauce mixture, and olives. Stir all together before placing the lid on top.

Cook on Low 4 to 6 hours.

Sprinkle Parmesan cheese on top before serving!
