Slow Cooker Honolulu Pork

This is the very first slow cooker recipe I ever tried, and it is still my most successful slow cooker dish. It is hands'down my husband's all-time favorite recipe that I make. It's funny because it's probably the least "gourmet" recipe that I have! It just goes to show you that sometimes simple is best!

1 1/2 - 2 lbs. boneless pork loin, cut into strips or bite-sized pieces
3/4 cup of your favorite barbecue sauce (my family likes hickory)
1-2 red or green bell peppers, diced (we use red)
1 (14oz) can pineapple tidbits in juice, juice reserved
3 tbsp. cornstarch
salt and black pepper for seasoning
Grease the inside of your slow cooker with vegetable oil or spray. Season pork with salt and black pepper if desired, and place pork into slow cooker. Pour barbecue sauce and 1/2 cup of reserved pineapple juice over pork. Pour pineapple tidbits into slow cooker and mix well. Cover with lid. Cook on low for 8 hours or high for 5 hours (I prefer low because the meat comes out more tender). Cook time also varies depending on how hot your slow cooker cooks. About one hour before end of cook time, place diced peppers in slow cooker and stir (you can put peppers in at the beginning of cook time, but I like my peppers more crisp). At the end of cook time, thicken sauce with cornstarch and 1/4 cup water or pineapple juice, if desired. Serve over hot cooked white or brown rice. I've also made this recipe using boneless, skinless chicken thighs, and it's equally delicious.
