1 cup chopped celery
2 cups chopped carrots
3 tbls coconut oil
16 oz red lentils, rinsed (you may use any color lentil if you like)
4 garlic cloves, minced
1 tsp turmeric
1 tbls salt
1/2 tsp black pepper
2 tsp curry powder (I use Blue Mountain)
1 tsp ground cumin
2 tsp smoked paprika
1/2 tsp cayenne
1 tsp dried cilantro
1 tsp dried parsley
1 can full-fat coconut milk
5 cups vegetable broth
