A one pot wonder of a meal with a little spice. Southwest Chicken ‘n Dumplins

1 pound chicken tenders cut into 1 inch cubes
3 small potatoes peeled and diced
1/2 a large white onion diced
4 cups of water
1/2 red bell pepper diced
16 ounces Hatch Green Enchilada Sauce
4 ounces Hatch Green Chiles diced
6 medium white flour tortillas cut into 1 inch cubes
2 teaspoons cumin
salt and pepper to taste
grated jack cheese and cilantro to garnish
Boil onion, water, chicken and potatoes with salt in a dutch oven or soup pot for about 30 minutes. Skim off chicken foam about half way through. Add enchilada sauce, green chiles, red pepper and cumin....
