Spaghetti Frittata

This delicious, rich and satisfying spaghetti frittata would make a wonderful breakfast, brunch or light dinner.

6 large eggs
¼ cup grated Parmesan cheese
2 cups cooked spaghetti (about 4 oz. uncooked)
4 slices of bacon, cut into bite size pieces
1 small red onion, diced
2 cloves garlic, minced
3 oz. spinach, roughly chopped
¼ cup black olives, sliced
1 cup mozzarella, grated
6 grape tomatoes, halved
1 tablespoon torn fresh basil leaves
salt and freshly ground black pepper, to taste
In a large bowl, whisk together the eggs and Parmesan cheese until well blended. Season with salt and pepper to taste. Add the spaghetti and toss to combine everything. Set aside. Preheat the oven to 375...
