A crisp, shortbread base with a velvety lemon filling, packed with juicy strawberries - summer in one bite!

For the shortbread base:
1 cup plain flour
1 stick (113g) unsalted butter, at room temp
1tbsp cornflour
2tbsp icing sugar
1/2tsp vanilla extract
For the filling:
1 can (397g/14oz) sweetened condensed milk
2 large egg yolks
Zest of 1 lemon
3/4 cup freshly squeezed lemon juice, this was 5 lemons for me
1 cup, diced, fresh strawberries
