Sweet Fire Chicken Panda Express Copycat

This copycat recipe fulfills my cravings for Panda Express! It is sweet but with a fiery kick!

Chicken
2 chicken breasts, cut into chunks
Salt and Pepper
3/4 cup flour
2-3 eggs beaten
1 cup cornstarch
canola oil, for frying
Sauce:
1-2 tsp crushed red pepper flakes (depending on how spicy you like it)
2 garlic cloves, minced or 1 t. garlic salt
2/3 cup granulated sugar
1 cup water
6 Tbsp white vinegar
1 pinch of salt
3 Tbsp cornstarch
4 Tbsp COLD water
Extras:
1 (20oz) can pineapple tidbits, drained
1 red bell pepper cut into 1” chunks
1/2 white onion cut into 1” chunks
1 Tbsp canola oil
Green onion for garnish (optional)
