Thai Chicken with Coconut Peanut Sauce

Slightly crispy chicken over a bed of garlicky sautéed spinach served with a side of deliciously creamy coconut peanut sauce. This simplified version of the classic Pra Ram Thai dish is great as an entrée with rice.

1/8 cup hoisin sauce

3 tablespoons coconut milk

2 tablespoons peanut butter

1 tablespoon olive oil

2 cloves of garlic, minced

4 cups spinach leaves

2 tablespoons olive oil

1 cup raw chicken, sliced

1 tablespoon cornstarch
