Thai Hot and Sour Prawn Soup (Tom Yam Goong)

Thai “national dish”! The picture shows my mother’s work when she was studying in Thai cookery school in Thailand. In most restaurants this dish is in thick soup and covered by oil. Actually in traditional northern Thai cuisine, the soup is clear and quite slim – no added oil, and rich in protein.

12 ounces prawns
12 ounces tomato
8 ounces straw mushroom
20 head green peppers
1/2 ounce garlic
1 ounce shallots
1/8 ounce lemongrass
1/8 ounce Siamese ginger
3 tablespoons fish sauce (Thai soy sauce)
5 head kaffir lime leaves
2 tablespoons lime juice
2 head coriander
