Thai Style Coconut Rice

A perfectly subtle and ever-so-slightly sweet flavor puts this Coconut Rice at a whole different level than the classic side dish.

1/2 T olive oil (or canola or grapeseed)
1 cup Rice (we like white basmati)
2/3 cup full fat Coconut Milk
1 1/3 cup water
1 T sugar
1/4 tsp salt, more or less to taste
1/4 cup dry roasted, sliced almonds
