The BEST Caramel Apple Cheesecake Bars

A brown sugar shortbread crust, smooth cheesecake layer, lightly tart apples, with a crunchy cinnamon streusel crust all drizzled with caramel.

Crust:
2 cups all-purpose flour
1/2 cup firmly packed brown sugar
1 cup ( 2 sticks butter, softened )
Cheesecake Filling:
2 (8 oz) packages cream cheese ( softened )
1/2 cup sugar
2 eggs
1 tsp pure vanilla
Apples:
3 Granny Smith or Macintosh apples, peeled, cored, & cut into 1/2" or less cubes
2 Tbsp sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 Tbsp lemon juice
Streusel Topping:
1 cup firmly packed brown sugar
1 cup all-purpose flour
1/2 cup quick cooking oats
1/2 tsp cinnamon
1/2 cup (1 stick) butter ( softened )
Drizzle:
1/2 cup caramel topping for drizzling after being baked
