The Perfect Lemon Crinkle Cookies

Summer calls for LEMON flavored anything! Seeing as how my husband is a lemon flavor fanatic & I'm a cookie fanatic I decided to combine our interests & here you have lemon crinkle cookies. SO DELISH. They just melt in your mouth & the flavor is light & sweet.

1/2 C butter (one stick)
1 Cup sugar
1 egg
1/2 teaspoon vanilla
1 teaspoon lemon zest
1.5 Tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1.5 Cups all purpose flour
1/2 Cup powdered sugar
