I was on a mission to create the ultimate meatball sub and this is it!

8 hoagie buns
16 slices mozzarella cheese
6 Tbs butter, melted
1/2 tsp garlic salt
1/2 tsp dried parsley (plus more to garnish)

For the meatballs:
1 pound lean ground beef
1/2 yellow onion, finely chopped
1/2 cup breadcrumbs
1/4 cup fresh grated Parmesan cheese
2 eggs, lightly beaten
3 cloves of garlic, minced
2 tablespoons fresh parsley, chopped
2 teaspoons dried basil
1/2 teaspoon salt
1/8 teaspoon freshly cracked black pepper
8 ounces mozzarella cheese, cut into 1/2 inch squares

For the sauce:
1 tablespoon olive oil
1/2 yellow onion, diced
2 cloves of garlic, minced
1/2 teaspoon cornstarch
1/4 cup beef broth
1 (28 ounce) can crushed tomatoes
2 tablespoons fresh parsley, chopped
2 tablespoons fresh basil, chopped
1/2 teaspoon kosher salt
