Three Cheese Mushroom and Spinach Calzone Recipe

My family loves Italian food. We eat our fair share of pizza around here, so I decided to try something a little different. I am usually the only person in our family who will eat mushrooms and spinach, but this tasty recipe changed that real quick! This is one of our family's favorite meals and I'm sure your family will love it too!

1 tablespoon olive oil, plus additional for brushing
1 (8 ounce) package sliced mushrooms
2 cloves minced garlic
1/2 teaspoon dried oregano
4 cups (packed) fresh baby spinach
1 (13.8 ounce) tube refrigerated pizza dough
5 tablespoons grated Parmesan cheese, divided
1 1/2 cups grated Fontina cheese, divided
1/4 cup ricotta cheese
1/4 teaspoon dried crushed red pepper
Nonstick cooking spray
