This Vegetable Pancit is a ROCK STAH! It was meant to be a side dish to some pinoy pork, but it stole the dinner show!

8 ounces rice noodles
2 cups vegetable broth
2 tablespoons soy sauce
1 tablespoon hoisin sauce
1/2 teaspoon sesame seed oil
Pinch crushed red pepper
1 tablespoon extra-virgin olive oil
1 tablespoon minced garlic
1 tablespoon minced ginger
1/2 cup thinly sliced onion
1/2 cup shredded carrots
1 cup thinly sliced celery
1 cup thinly sliced napa cabbage
1/2 cup thinly sliced green onions
