Vegetables Samosa

Veg samosa is a stuffed pastry and a popular fried snack in India.This samosa is filled with boiled and spiced vegetables for flavor and taste. I prepared this samosa dish for the international food festival organized in our community . I enjoyed making this tasty samosa ,hope you try making this snack and enjoy.

For filling
2 tsp canola oil
½ tsp cumin seeds
1 onion sliced
2 tsp fresh coriander leaves
Pinch of hing/ asafetida
3 potato boiled and cut into pieces
½ cup boiled peas
¼ cup beans boiled and cut into pieces
¼ carrot boiled and chopped
½ tsp red chili powder
¼ tsp turmeric powder
½ tsp salt or as per taste
½ tsp chat masala / mango powder
2 cup oil for deep frying

Samosa / pastry sheet
2 cup all purpose flour
1/3 cup wheat flour
3 tsp canola oil/ butter
½ tsp salt
1/2 cup water to prepare dough
Step 1 samosa sheet preparation *In a large mixing bowl combine all the ingredients mentioned above in samosa sheet . *Add water gradually until the dough holds together,and knead well to form smooth dough. *Take a lemon size dough ball and roll out into 8 inch diameter circle,cut each circle in half and set it aside and cover with moist towel. *Repeat the above step to make 10 to 15 samosa sheets. Step 2 *To make the filling,heat oil in a skillet and add cumin and hing,when the seeds pop,add onion and coriander. * until the onion becomes translucent,then add boiled vegetables and all the spice powders mentioned in the filling ingredients along with salt and combine well and sauté for few min and remove from the heat and keep it aside. *To assemble the samosa,take one prepared sheet and fold each half circle in thirds to make a pie wedge shape/ cone shape . *Fill the cone with 2 tsp of vegetables filling and seal the edges by applying all purpose flour paste or water and pinch to seal. *Repeat the above step to fill all the samosa sheets and keep it aside until they are ready to fry. *Once all the fillings are done,deep fry the samosa on a low to medium heat until they turn golden brown and crisp. *Serve the hot samosa with any savor chutney.
