Wilted Spinach Salad with Pan Seared Scallops

Also known as Crack Salad, you WILL lick the plate when you\'re finished eating this quick and easy dinner salad.

4 whole eggs, hard boiled, peeled, and quartered
12 ounces fresh, baby spinach, washed and dried
1 pound sea scallops
1/2 cup sugar
1/4 cup white vinegar
1/4 cup red wine vinegar
4 slices turkey bacon, crumbled
1/2 cup red onion, thinly sliced
Place the turkey bacon on a paper towel on a microwave safe plate. Top with a second paper towel and cook on high 3 to 4 minutes or until crisp. Remove from heat and set aside. Wash and dry the spinach....
