With just 2 ingredients and about 5 minutes you can make a delicious and moist Pumpkin Gingerbread! That's right — the BEST gingerbread cake starts with a cake mix, and it's perfect for brunch or dessert!

1 (14.5 ounce) box gingerbread mix (just the dry mix)*
1 cup canned pumpkin ( not the sweetened pumpkin pie filling )
Optional: powdered sugar for dusting
NOTE: *This is a smaller size cake mix than a standard boxed mix. It’s made for an 8-inch square dish, rather than a 13x9-inch dish. If you can’t find the smaller box, then you can use a standard size (18.25 ounce) box of gingerbread mix and use an entire 15-ounce can of pumpkin. Bake in a larger dish until cooked through.
