Agaric Salad with Chinese Oil and Vinegar

The sesame oil and vinegar based dressing in this dish is widely used in Chinese salads. The exotic vegetable black agaric tastes smooth and chewy, and goes perfectly with the vinegar. It has quality protein and fibers and is particularly rich in iron. It is good for nourishing human blood and making rosy cheeks for ladies.

6 oz. black agaric, fresh; or 1/2 oz. dried, soaked in cool water for at least 3 hours
8 oz. cucumbers
8 oz. tomato
4 oz. onion
3/4 oz. coriander
Sauce:

1 1/2 T. vinegar
2 tsp. sesame oil
2 tsp. light soy sauce
1 tsp. chili oil
1 tsp. sugar
1/2 tsp. white pepper powder
