Almond Cookie'n'Cream Sandwiches

A paleo recipe full of healthy fats, protein and fibre!

For the Batter

1 cup almond flour (I made mine by grounding up almonds in a food processor)
1/4th cup Protein Powder (if you don’t want to use this just up your almond flour)
1/4th cup coconut flour
1/2 cup tapioca starch (or arrowroot would work, or cornstarch but I try to avoid corn due to the high rating of GMOs)
1/2 tsp baking powder
1/4 tsp baking soda
2-3 tbsp honey
tbsp coconut oil (not melted completely but soft)
2 tbsp stevia OR 1/4th cup coconut sugar/sucanut/brown sugar
tsp cinnamon
tsp nutmeg
Water as needed (I used about 2.5 tbsp)
1/4 cup dark chocolate chips (optional, I used….obviously)

For the ‘Icing’
1/2 cup soaked macadamia nuts
1/4 tsp stevia (optional, I omitted because I was using chocolate)
