An Easy and Delicious Corn Soup

It took me twenty years to find a recipe that compared to my first ever bowl of corn soup, but it finally happened thanks to Leanne Brown's free PDF cookbook 'Good And Cheap. With a few minor changes, I was literally jumping for joy. I hope you enjoy this easy-to-make, inexpensive, delicious and filling soup as much as I do.

1 tbsp butter
1 large medium-large onion, finely chopped
1 red bell pepper, finely chopped
2 sticks of celery, finely chopped
1 small-medium potato, diced
1-2 tbsp minced garlic
1-2 tbsp chili flakes or 1 finely chopped fresh chili pepper (optional)
4 cups corn (fresh, canned or frozen)
1 tbsp flour
5 cups chicken stock or vegetable broth
salt and pepper

Add 1 tbsp of butter to a large sauce pan and melt over medium heat.
As soon as the butter has melted, add onion, celery, red pepper and potato. Stir and cover for five minutes.
