Andes Peppermint Crunch White Hot Chocolate

Hot chocolate is a cold weather staple. This peppermint white hot chocolate is a snap to whip up, and if your kids are able to use the microwave by themselves they can even make a cup of this without help. With just a couple of ingredients and a couple minutes of time, you will be ready to snuggle up by the fire with a cozy cup of peppermint white hot chocolate to warm up while you watch the snow fall outside!

1 cup milk

Pour the milk into a microwave safe mug. Heat on high until steaming but do not let it boil. Depending on your microwave, this will take about one to one and a half minutes.
While the milk is heating, unwrap the mints and break each one into three or four pieces. Add the mints to the cup of hot milk and let stand for about a minute for the chocolate to start to melt. Stir till the chocolate is melted and incorporated. Garnish with whipped cream if desired.
Notes: You may use any kind of milk you like for this recipe. Start with only 6 mints, and taste test after they have been stirred in. Add more if you want more flavor.
Note that the mints are flavored with peppermint oil. The oil will not emulsify with the milk. This means your finished drink will have a layered appearance. This means that not only is your drink tasty, it also creates a pretty presentation without any extra effort on your part!
