Angel Hair Pasta and Cheese

Are you like me and every time you make spaghetti you wind up with extra noodles? Do you ever try to think of something creative to do with the extra noodles? Well, I started making mac and cheese with the left over noodles and now the family always ask me to cook extra noodles so that I can make this recipe! I usually have about 4 oz. of noodles left over, but you can adjust the recipe according to how much noodles you have left.

4 oz of Angel Hair Pasta
2 Tbsp. Butter
2 Tbsp. All Purpose Flour
1 tsp. salt
1/4 tsp. peper
1 1/2 cups of Mild Cheddar cheese shredded
1/2 cup of Sharp Cheddar cheese shredded
2 cups milk
2 Tbsp. Butter

1 1/2 cups of Mild Cheddar cheese shredded
1/2 cup of Sharp Cheddar cheese shredded
2 cups milk
On medium heat melt Butter in sauce pan on stove. Then add flour, salt and pepper and whisk until smooth. Then take wooden spoon and stir for about a minute. Next add milk and stirring constantly continue to stir for about 3 minutes (long enough for milk to start to thicken. Then take pot off burner and immediately add 1 1/2 cups of Mild Cheddar cheese and stir until melted. Put noodles in pot and mix with cheese sauce.
Transfer to 1 qt. baking dish that has been lightly sprayed with cooking spray.
Sprinkle 1/2 cup of Sharp Cheddar on top.
Place in preheated oven at 375 for 20 minutes or until cheese is starting to bubble.
Remove from oven and let rest for 15 minutes, then serve!
